There’s ruby in the Sparse Reef trenches (kinda hard to find though), obviously safer than the Blood Kelp zones and other places (that i know of) where it spawns.

For gel sacs, you can actually grow them in a planter. Try getting seeds from already existing ones and then grow them so you don’t risk death.
