I personally think the cave ceiling might have formed over its bones, or (the more realistic one) the cave system was dug out or collapsed or something which revealed the preserved remains of the Garg.
The way volcanoes form, The entire system of caves above the Garg simply didn't exist when the garg was alive. It happened to die in the crater, possibly because of precursors or kharaa, and the caves formed around it. Fairly straightforward.
Maybe the entire ecosystem wasn’t enough to support its huge appetite.
I seriously doubt that. A creature of literal gargantuan size wouldn't evolve without huge amounts of abundant food. Starvation does have impacts on bones as well, so it would be something the PDA could detect.
It's much more likely the Gargantuan leviathan died from something perfectly normal, and just happened to fall into the Subnautica crater.
Unless you're saying that because food ran low, the gargantuans fought each other and this one lost?

It probably doesn’t live there because it’s big enough that it’s bones are found all throughout the lost river, meaning it could be almost the same size as the lost river.
The gargantuan leviathan does not live in the subnautica crater. It's a species evolved for the void. We can tell from its giant size.
Probably ate ghosts.
